Spicy Shrimp and Rice

What is nice about this recipe is the okra is not cooked into sticky mush. This is a very 'fresh' presentation of the primary ingredients..

Ingredients:

4 slices of bacon, cut into pieces
3/4 lb medium shrimp, peeled and cleaned
1 medium onion, chopped fine
2 teaspoons Maceo Seafood Seasoning
1 teaspoon dried thyme leaves
1/4 teaspoon ground red pepper (cayenne)
1 1/4 cups chicken broth
10 oz frozen cut okra
1 1/2 cups minute rice
1 medium tomato, chopped

Directions:

  1. Cook and stir bacon in large skillet on medium heat until lightly browned. Drain bacon, reserving 2 tablespoons of drippings.
  2. Add shrimp, onions, and seasonings. Cook and stir until shrimp are pink.
  3. Stir in broth and okra, and bring to a boil. Stir occasionally to break up okra if they are stuck together
  4. As soon as it is boiling, stir in rice and tomato. Immediately remove from heat and let stand 5 minutes.
  5. Stir and enjoy.
