
Ingredients:
Extra Virgin
Olive Oil
Maceo's Italian Seasoning (Sprinkle to Taste)
2 Cloves Fresh Garlic
1/4 Cup Small Purple Onion
1/4 Cup Small Red Bell Pepper
1/4 Cup Green Onion Chopped
1 Cup Green Lentils
1/2 Cup Pasta ( Ditali Cut)
Pinch of Parsley
1/4 Pound Ham or Pancetta
Directions:
Chop Purple Onion, Red Bell
Pepper, Green Onion, and ham/ pancetta
Now take your garlic cloves and slice them very
thin ( If you don't know what thin is watch
Goodfellas)
In a deep saucepan
drizzle a generous amount of Extra Virgin Olive Oil
Heat Olive oil and add ham/
pancetta and all vegetables except the garlic. sauté
until onions are translucent and you begin to smell
them
Now add your finely sliced
garlic, don't burn them
When
Garlic is golden add dry lentils, stir and add 6
cups of water. Bring to a boil for 10 min. cover and
lower to a medium heat and simmer for 20 min. or
until lentils are soft
In a
separate pot add 1/2 cup pasta and boil until al
dente. Strain and set aside
Now add
3 tablespoons of Maceo's Italian Seasoning to
the lentils. Drizzle with Olive Oil and 1/2 cup of
quality grated parmesan cheese, stir and continue to
simmer until lentils are soft.
Add
your pasta to the lentils, stir and let simmer for
another 10 min.
Spoon into bowl,
top with parmesan cheese, olive oil, and a pinch of
parsley and more Italian Seasoning to taste. Serve
with French Bread
