Blackened Redfish

Ingredients:
Redfish filets -
Maceo's Blackened Seasoning (regular or salt free)
Melted Butter
Directions:
  1. Heat a 10" dry iron skillet very hot (high for about five minutes)

  2. Wash fish filets in fresh water and pat dry with paper towel.

  3. Dip fish filet in butter, sprinkle on seasoning to taste

  4. Drop fish in hot skillet.

  5. Cook about two minutes per side. The butter and spice blend will form a black crust on the fish.

For a lighter recipe, make "Bronzed Redfish" by using cooking spray instead of using butter.
